Moms Old Fashion Bologna Salad
Super delicious ~ Highly addictive
My Mom and grandma have made this recipe for as long as I can
remember. To grind the bologna, they
used an old fashioned counter-top grinder - the cast
iron kind that clamped onto the edge of the kitchen counter.
The amounts for this bologna salad are totally approximate,
because the recipe is very forgiving. You
just add all the ingredients in, taste, add a little more mayo if needed,
taste, add a little more relish if needed… you get the idea.
Ingredients:
- 2 pounds bologna, ground in food processor
- 4 eggs, hard-boiled and chopped
- ½ to 1 cup mayonnaise
– start with a little and keep adding until it’s the consistency of a nice
sandwich spread.
- ½ cup sweet pickle relish
Instructions:
In a bowl, combine bologna, eggs, and relish. Add mayonnaise; mix until combined.
Be sure to taste-test as you mix.
Spread it on your favorite bread (my favorite is white toast)
Makes 8 -10 sandwiches. It depends on how much you put
on your sandwich and how much taste testing was done during preparation.
*Attention low-carbers: This is great with celery, green pepper wedges, or as a tomato stuffing.
