Auntie Babette's | Sweet Potato Apple Hasselback

Sweet Potato Apple Hasselback 

This is a dessert masquerading as a vegetable

Prep: 20 minutes     Cook: 55minutes     Ready in: 1 hour 15 minutes


-2 Sweet potatoes, evenly sized
-2 T Butter (chopped in little pieces)
-2 T Applesauce
-2 T Maple syrup 
-1/4 C Chopped pecans 
-1/4 C Dried cranberries
-1/4 C Peeled apples,  finely diced
-1/2 t Cinnamon
-1 pinch of salt
-Olive oil


-Peel sweet potatoes 3/4 of the way - leave some peel on the bottom of the potato
-Lay wooden sticks on each side of the potato (to avoid cutting all the way through) 
-Slice potatoes thin
-Rub potatoes with olive oil
-Grease baking dish 
-In a small bowl, mix together remaining ingredients
-Stuff  some mixture between the slices
-Top potatoes with remaining mixture  
-Cover the dish with foil and bake for 40 minutes.
-Remove the foil and bake for another 10 - 15 minutes, watch carefully
-Cool for 5 minutes before serving
Serves 2-4
