Green Pepper Nachos


Green Pepper Nachos

Who says nachos have to be made with tortilla chips? Yes, I love them too, but my waistline doesn’t.

To satisfy your cravings for this classic dish, try this great chip alternative.

Ingredients:
  • 1 lb. lean ground beef
  • 1 medium onion, chopped
  • 1 can tomatoes with green chilies, drained
  • 1 package taco seasoning mix, prepare as directed on package
  • 3-4 green peppers, seeded and cut into wedges
  • 1 C. shredded cheddar cheese
Toppings:
  • Sour cream
  • Sliced Jalapenos
Directions:
  • In a large skillet over medium heat: saute onions, add ground beef and brown, add tomatoes with chilies, let simmer for 5 minutes, then drain off fat.
  • Return meat mixture to skillet, add taco seasoning and water.  Prepare, following package directions.
  • Preheat oven to 375 degrees.
  • While hamburger is cooking, clean green peppers, core, seed, and cut into wedges.  Set peppers aside.
  • Line 9x13 pan with foil, grease foil or use cooking spray.
  • Arrange green peppers on pan, fill  with meat mixture, top with cheese and Jalapenos.
  • Bake for 8-10 minutes or until cheese is melted.
  • Remove from oven, top with your favorite topping.  Enjoy.
